One of my absolute favorite Vietnamese braised chicken recipes (Ga Kho). This protein-packed Asian dish is designed to hit your goals and your cravings. Per 1 serving: 628 kcal | 65.2g protein | 5.1g carbs | 34.5g fat | 0.5g fiber.
Soft-boil 4 eggs for 7 minutes, peel, and set aside. Heat 2 tsp oil in a pot, add sweetener, and let it melt and darken into caramel. Add shallot and garlic, sauté until fragrant. Add chicken, sear until lightly browned, then stir in fish sauce and soy sauce. Pour in broth and water, cover, and simmer for 15–18 minutes until chicken is tender. Add eggs during the last 5–7 minutes to absorb flavor and color. Uncover and simmer for 5–10 minutes until the sauce reduces and turns glossy. (Optional) Stir in ½ tsp cornstarch mixed with 1 tbsp water at the end for a thicker glaze. Finish with black pepper, chili, and green onion.
