AHI TUNA SOBA NOODLE BOWL

Dry both sides of tuna steak with a paper towel. Make marinade for tuna by mixing together 1 tbsp soy sauce, 1/2 tbsp sesame oil, 1/2 tbsp honey, salt, and pepper. Coat tuna steak completely and let marinate for 10 minutes. While tuna is marinating, boil soba noodles for 4 minutes, chop cucumbers, and heat up edamame. Sear tuna 1 minute on each side and cut into bite-sized slices. Rinse soba noodles with cold water and make soba sauce by mixing 1 tbsp mirin, 1/2 tbsp lite soy sauce, pepper, sesame seeds, and chopped green onions. Mix soba sauce with noodles and assemble the bowl with ahi tuna slices, cooked edamame, and sliced cucumbers. Top with roasted sesame seeds. Enjoy!
