Cozy Chicken Congee

1. Prepare the chicken: In a bowl, whisk oyster sauce, cornstarch, bouillon, and water. Add chicken slices and massage until liquid is absorbed. Marinate 15–20 minutes.
2. Cook the rice base: Rinse rice until water runs clear. Add rice, broth, water, ginger, and garlic to a heavy-bottom pot. Bring to a boil, then lower to medium-low heat.

• First 10–15 min: stir gently every 5–7 minutes to prevent sticking.

• Once it thickens: stir gently every 3–4 minutes to avoid burning and help create a creamy texture. Add hot water if it gets too thick.

3. Add veggies & chicken: Stir in cabbage and the marinated chicken slices. Simmer until cabbage softens and chicken is fully cooked through.
4. Egg swirl: Slowly drizzle in beaten egg while stirring gently in one direction to create ribbons.
5. Season with salt and white pepper. Garnish with green onion and serve hot.
