Shrimp Summer Rolls with Peanut Sauce
30 mins prepServes 4
These shrimp summer rolls are surprisingly easy to make and taste even better than expected! The trickiest part is the wrapping; be careful not to overfill. Served with a delicious homemade peanut sauce.
1. Season shrimp with salt. Cook shrimp on medium heat for about 1 minute per side, or until no longer raw; do not overcook. Set aside.
2. Chop cucumbers, carrots, and avocados into small slices.
3. Soak bean thread noodles in hot water until tender. Drain.
4. For the peanut butter sauce, combine fish sauce, lite coconut milk, creamy peanut butter, hoisin sauce, sesame oil, and honey in a bowl and mix well.
5. Dip summer roll wraps briefly in water to soften.
6. Assemble spring rolls by placing shrimp, cucumber, carrots, avocado, lettuce, and mint leaves onto a softened wrap. Roll tightly.
7. Garnish the assembled rolls or the sauce with sesame seeds. Serve immediately with the peanut sauce and enjoy!
